December’s “Dinner’s in the Bag!” at the Potsdam Food Co-op will feature Cauliflower Millet Kugel. This version of a traditional Kugel recipe is made with millet, a nutty and gluten-free ancient whole grain. It provides a nice change from noodles that are often used in this classic comfort food.


Millet is an excellent source of protein, fiber, several B vitamins, and numerous dietary minerals, especially magnesium. It also contains antioxidants, which help to fight off disease-causing free radicals.


Samples will be offered by Big Spoon Kitchen at the 1st Thursday Sampling on December 6th from 3:30 - 5:30 pm. Meal-Kits will also be available all month for purchase, complete with the recipe and Co-op ingredients to make the meal at home.


Each month “Dinner’s in the Bag!” will present a new recipe to try, along with the ingredients to take home and create yourself. The Meal-Kits offer the convenience of having everything gathered with all that is needed to make a quick and nutritious meal in your own kitchen, no planning required.


The Potsdam Food Co-op & Carriage House Bakery is located at 24 Elm St. It is open daily from 8am to 7pm. It is a member-owned cooperative grocery store (although membership is not required) where everyone is welcome to shop and anyone is welcome to join. The Potsdam Food Co-op's Cheese of the Month for December will be offered during their 2nd Thursday Sampling on December 13th. From 3:30 - 5:30 pm you will have the opportunity to sample French Double Crème Brie. This classic cheese is a soft ripened cheese that contains 60 - 75% butterfat, resulting in a creamier texture with a wonderful buttery flavor. Understandably known as "The Queen of Cheeses", this delectable cheese is made of cow's milk and named for the Brie region in France where it originated. Its rich buttery taste with nutty undertones is perfect for any number of dishes. It is an essential addition to any cheese board and makes a delicious and decadent appetizer when wrapped and baked in puff pastry. As a quick lunch, toss slices of Brie with hot pasta, sun-dried tomatoes, and black olives. Also try spreading it on focaccia and topping it with roasted tomatoes and fresh herbs as a starter. When not incorporated in a warm recipe, serve Brie at room temperature. Known as one of the great dessert cheeses, serve it with fresh fruit such as berries, pears, apples, grapes, or layer it with apple slices and serve it with warm caramel. Brie pairs well with sparkling wines, whites Chardonnay or Pinot Gris, reds Merlot or Syrah, or apple cider.
