July Cheese of the Month: Halloumi

The Potsdam Food Co-op’s featured Cheese of the Month for July is Halloumi – the grilling cheese of Cyprus.
Considered to be ‘The World’s Most Fascinating Cheese’, Halloumi is the traditional white cheese of Cyprus and has been produced on that island for centuries. Although produced today in modern facilities, it is done so with great respect to tradition.
Halloumi is a rindless cheese usually prepared from a mixture of sheep, goat, and sometimes cow’s milk, rolled in mint and soaked in brine, which keeps it fresh and flavorful for long periods of time – even in hot climates. This fascinating cheese is ideal for grilling, frying, and barbecuing because its higher-than-normal melting point allows it to retain its shape and texture. Pair Halloumi with Sauvignon Blanc or dry rosé, light red, or sparkling wines.
Pairing Suggestions For Green Onion Cheddar
Suggestions: Taste traditional Halloumi fresh, add it to cooked dishes, or include it in salads. Use it to accompany cold fruit, especially watermelon, serve it with a slice of smoked pork, or stir fry it and add it to pasta with cherry tomatoes and greens. Halloumi is especially suitable for omelets and is ideal for inclusion in grilled vegetable kabobs.
