Our names are Patrick and April St. Onge. We began our pork adventure together in late 2012, but our pork histories began long before that. Patrick grew up in Westville, NY on a dairy farm where they raised pork for the family. April grew up near Niagara Falls on a farm where pigs were the focus. Her family ran a farrowing operation, which focused on breeding and caring for the piglets until weaning when many were sold to other farms. Some were finished and sold for pork.
Now we are working on expanding Pat and April’s Pork along with our children. Amos is eight and A.J. is six. (She’d like to include that she’s actually almost seven) 🙂
Healthy, tasty, home grown food is important to our family and we want to bring that to you!

Sandefer Farms Piedmontese
Harrisville, NY
Established 1983, Sandefer Farm is located near Harrisville. Make and Jenifer Sandefer raise a special breed of cattle, Piedmontese. Piedmontese beef has the highest amount of “good” poly-unsaturated fat, the lowest amount of “bad saturated fat, and the highest percentages of omega-3 essential fatty acids compared to other breeds. This lean meat contains the naturally-occurring myostatin gene, which consistently reduces fat while providing extraordinary tenderness.
