Sweet And Sour Cucumber Salad
Free of mayonnaise or dairy, this Sweet and Sour Cucumber Salad makes for a perfect picnic side dish. A summertime favorite, it takes advantage of the bountiful cucumber harvest that many experience in the warmer months. Sour, but sweet, it pairs well with grilled meat, poultry, or seafood. The acidity helps to cut through the richness of a meat dish, lending a refreshing and cool compliment.
Sugar can be substituted if you are unable to use honey. Fresh Dill, Parsley, even Marjoram straight out of the garden would make for a great herb addition. Feel free to spice it up with the addition of diced hot peppers or pepper flakes. Or even just a few extra grinds from the black pepper mill. Give it an Asian flair with a drizzle of sesame oil and sprinkle of sesame seeds.

- 1 pound English cucumbers, very thinly sliced
- 1 small sweet onion, thinly julienned
