Vegan Breakfast Sandwich… Meat-Free Cooking With Laurie!
I bet you’re wondering, “Laurie, what exactly are you putting on your vegan breakfast sandwich?”
There were 3 main components to my vegan breakfast sandwich:
- Beyond Meat‘s Beyond Breakfast Sausage in a classic flavor
- Just Egg frozen plant-based folded egg patties
- Violife Just Like Smoked Provolone Slices
I used English muffins I already had in my refrigerator, but any carb of choice would work nicely – toast, bagel, etc.
On to the cooking…
You can cook the Just Egg frozen patties in a variety of ways: skillet, microwave, oven, even toaster! I opted for the microwave since I was using the skillet to cook my Beyond Sausage. I toasted the English muffin, making sure all ingredients were done at the same time. The Just Egg frozen patties only take 1 and a half minutes in the microwave. It takes about 2 minutes per side in the skillet for Beyond Sausage. It was pretty easy to have both of those items done at the same time (while also remembering to toast my English muffin!).
Once everything was done I assembled my sandwich, opting to do Beyond Sausage, then Just Egg, then Violife Provolone. After putting everything together I put the sandwich in the microwave for 30 seconds just to get the Provolone meltier. I love that Violife cheese actually melts!
And did I like my vegan breakfast sandwich?
I did! I’ve had Just Egg’s refrigerated liquid eggs before and used them to make scrambles. I like the texture and consistency of Just Egg’s products waaaaay more than any other vegan egg substitute that I’ve tried so I was curious about the frozen patties. I’m a big fan of Beyond Meat’s products and I’ve been wanting to try their Beyond Breakfast Sausage patties so making breakfast sandwiches seemed like the perfect excuse to try both of them.
