Rhubarb Bread Pudding Recipe

Try an unusual take on a classic rhubarb dessert

  • 1 lb rhubarb cut into 1" pieces
  • 1/2 cup sugar
  • 1/2 lb bread crumbs stale or dried out works best


  • 3 eggs
  • 1/2 cup sugar
  • 1 cup half and half
  • 1 1/2 cups milk
  • 1/4 tsp nutmeg


  • dots butter
  • 1 tbsp brown sugar
  • 1/2 tsp cinnamon


  • Preheat oven to 350 degrees. Grease and flour a 9x13 inch baking dish.
  • Combine rhubarb, 1/2 cup sugar, and cubed bread in baking dish.
  • Beat together eggs, sugar, half and half, milk, and nutmeg. Pour custard over bread and rhubarb mixture. Be sure to push down and make sure everything gets damp. Let sit for at least one hour, or overnight.
  • Dot the top of your bread pudding with pats of butter. Sprinkle with brown sugar and cinnamon.
  • Bake in the preheated oven until a toothpick inserted in the center comes out clean, about 50 minutes to 1 hour. Bake in water bath if possible.
