Apple Nourishment Magic

I meant to write this post back in late august – early September, at the height of local apple season. Life sometimes takes its own path, flowing where it wants to go.

Apples are a food of Healing Magic. You know, the “Apple a day keeps the doctor away” saying has truth in it. This Healing Magic of apples is well deserved. Hippocrates was purported to have said that all disease begins in the gut. If disease begins in the gut, one can extrapolate that with healthy lifestyle habits, health also begins in the gut.

I will list my previous Co-op blog posts on gut health and invite you to peruse these reading to familiarize yourself with gut health creation, prevention of problems, healing from disruption, and maintenance of good gut health.

I will insert bits of wisdom around The Mighty Apple’s contributions to gut health. Apples are rich in fiber and pectin. Both of these substances in apples and whole foods are nourishing and:

  • Aid digestion.
  • Remove toxins from the body.
  • Flush unneeded, extra fats and cholesterol from the system. Fats & cholesterol are both needed in the body. Balance is the key in everything. 
  • Support healthy elimination from the colon (see toxin removal above).
  • Support soothing and healing the digestive tract lining, your barrier between the food you eat and your internal ecosystem. 
  • Feed healthy gut microbes so these microbes flourish and inhibits the microbes that do not belong in the gut. This maintains the gut microbiome for optimum digestive, nervous, immune, and whole-body health. Because your body works as a whole being, holistic, your gut microbes are an important part of you and your vitality.

Apples are low in calories and rich in nourishment. They pack a powerful punch of goodness and provide whole food energy. Apples help to maintain electrolyte balance with their gift of potassium, sodium, and other electrolytes. Apples are a good source of potassium, phosphorus, calcium, manganese, magnesium, iron and zinc. Apples, eaten daily, have been correlated with lower incidences of colds and flu and reduced occurrences of headaches and tension related problems. Apples probably contain many phytonutrients that support healthy immunity and are high in B vitamins… feeding the nervous system for health. Magnesium promotes relaxation and relieves tension headaches.

The interesting thing, that has always fascinated me, is that our bodies are best nourished by nutrients packaged in a whole food. Yes, taking magnesium for example, helps support many functions. When that magnesium is brought into the body, with its array of synergistic nutrients packaged in a whole food, the body thrives at optimal vitality. 

Several years ago (seriously it has probably been way over a decade as I have been writing Co-op articles for 25+ years now… anyone want to take over?) I wrote an article about several varieties of heritage breed apples and their flavors, uses, and benefits. If I could find this article, I would re-share it. I believe it is on a floppy disk… somewhere. Can we even pull things off floppy disks anymore?

Apple Recipes* to Weave Some Magic in Your Kitchen

(And I do recommend just eating a raw, organic apple daily)

I recommend the use of organic, local, seasonal, whole food ingredients. Animal products are best if they come from animals that were raised and fed naturally.

Apple Infused Stir Fry

Ingredients
  

  • 3 stalks celery chopped
  • 1 purple onion chopped
  • 2 apples of choice cut in bite size chunks
  • 1 red pepper
  • ¼ cup butter
  • ¼ cup dry white wine
  • 1 lemon if using sea food
  • Salt & pepper to taste fresh ground is nice
  • Herbs to taste to fit the protein you add
  • Scallops or shrimp parsley & tarragon, beef (bay leaf & oregano)-pork (pulled pork spices) -lamb stew meat (rosemary & oregano), chicken chunks Thyme & parsley), etc.

Instructions
 

  • Heat a heavy fry pan adding butter to melt.
  • Quick stir fry onion and add celery.
  • Add meat pieces, stir in and cook a few minutes.
  • Add in red pepper and apple pieces with white wine. Stir for 2-4 minutes to finish cooking meat and lightly cook apples and peppers.
  • Serve with rice or pad Thai noodles.
  • Add salt & pepper & herbs to taste. Try herbs mentioned above or use your intuition with herbs.
  • If using sea food, squeeze the lemon over the food arranged on your plates.

Apple Cheddar Quiche

Ingredients
  

  • 1 tablespoon finely chopped onion
  • 6 tablespoons melted butter
  • 1 ¼ cups spelt or einkorn flour gluten free flour is fine
  • ¼ cup finely chopped walnuts
  • 2 large apples of choice sliced for a pie
  • 3 eggs
  • 1 cup whole milk cottage cheese
  • 1 cup shredded cheddar cheese
  • ¼ cup milk
  • ½ tsp salt
  • Pepper
  • Ground nutmeg

Instructions
 

  • Melt butter and sauté onion.
  • Mix in flour & nuts
  • Press into 9-inch pie plate
  • Bake in 350F oven for 8-10 minutes
  • Remove from oven and place sliced apples into crust, arranging evenly.
  • Beat eggs
  • Add cottage cheese, shredded cheddar, milk, salt, & pepper
  • Pour over apples
  • Sprinkle with nutmeg
  • Bake at 325F for 45 minutes
  • Remove and let sit for 10-15 minutes before serving.
  • Serve with crusty loaf of bread & butter or pita & veggies of choice.

Pork Chops in Creamy Apple Sauce

Ingredients
  

  • 4 medium pork chops
  • 1 cup chopped onion
  • ½ cup water
  • 2 cups applesauce
  • 1 tablespoon lemon juice
  • ½ teaspoon pepper
  • ½ cup sour cream

Instructions
 

  • Brown pork chops
  • Remove from pan and sauté onion
  • Add water to pan & deglaze (to remove stuck caramelized onions)
  • Reduce heat & add applesauce, lemon juice, and pepper. Mix well.
  • Add chops back to pan and smother in the sauce.
  • Cover pan and cook gently for 30-40 minutes.
  • Remove chops to warm platter, maybe oven set at 170-180F
  • Add sour cream to apple sauce mix in pan.
  • Heat but do not boil.
  • Pour over pork chops & serve.
  • Goes well over rice, with potatoes cooked however you like, and serve your favorite veggies.

Egg & Apple Breakfast Sandwich

Instructions
 

  • 1 fried egg cooked to your favorite consistency
  • Favorite bread toasted and buttered
  • Put thin slices of apples on one side of toast (or eat open faced)
  • Melt cheddar on the apple slices in the broiler.
  • Add egg to top & enjoy.
  • Eat the rest of the apple that did not go into your sandwich OR make a sandwich for a friend!
